I have been trying to add an XMPP contact using the people app (by editing one of my contacts), but there is no line to add it. Shouldn't be a away to add it from there? Is there an alternative way to do it from SailfishOS?

AFAIK it's not possible. You should use regular XMPP client to manage your roster.

I you add the key to a vcf card and import it with People's import guide: Settings->Apps->People->Import guide
it works. E. g. key X-JABBER for XMPP.

There is no way to add XMPP info to a contact. ...unless the person contacts you first. Then it is possible, by linking.
There is room for improvements regarding xmpp usage in Sailfish OS.
