I'd like the ability to have "grid lines", similar to the option in the Nokia N9, as those made it easier when taking photos with vertical/horizontal lines in the motive.

Also, see Wikipedia: rule of thirds.

According to AllBout Jolla & N9's "Sailfish OS 1.0.4.1 Ohijärvi - what's new" (more specifically: the last section, and its picture (embedded below)) there seems to be optional grid lines in SailfishOS v.1.0.4.x. :-)

I'd prefer it if the icons on the vertical camera mode were horizontal and not split in half.

They are in landscape mode.

@ApB - (not that the layouts of icons really are related to my "show grid lines" request, but ... )

Just saw YouTube: "MWC2014 - Telefonino.net intevista Stefano Mosconi, CIO di Jolla" (slightly after the 3' mark) - grid lines are present, and (as @bockersjv already mentioned) the icons seems to be as in present 1.0.3.8, "but with more options".

(Yes, the YouTube video is in Italian. No, I don't speak/understand Italian - but I viewed it anyways.
There seems to be "touch to focus" included as well. :-) )

This option should, when integrated, probably reside in
Settings → Apps → Camera
