I have my personal Gmail account and also a company MS Exchange account configured. When I share a pic from gallery via mail, the sender is always the MS Exchange account so I need to modified it to my personal Gmail account manually.

It would be useful to make configurable the default sender from applications.

this issue has been brought up in other regards as you were unable to change it without re-do the accounts but still a duplicate
