Since a few days ago, the Signal application stopped sending messages successfully because the "build of Signal has expired!", as the warning message in the application reads.

How can one back up the data base with the conversations, and ensure nothing will get lost after removing the installed application and installing a new version?

Still works on my machine (tm).

But to answer your question, there's an option in the main menu called import/export, choose it then choose export, and there should be an option to export a plaintext backup. I haven't tested it so I don't know if it works as it should, but you could try.

Thank you. Both built-in import & export functions work. I got the tool reinstalled and it works again.
