Hello everyone,

I know there is already an excellent list, listing the various compatible devices, however, I think this was complied before the release of the Pebble Round. Does anyone know if this device would be comaptible with Sailfish? Any help would be greatly appreciated,

Yes, but not all the features are there. You need Warehouse to download RockPool, the client for Pebble from Openrepos. A short list I can come up from the top of my head what works:

Notifications
Firmware upgrade
Watchfaces and their configuration
Watchapps and their configuration (apps needing companion apps on the phone won't work, there's a notification on the RockPool store page on those)
Pebble Health (No graphs, which were introduced in the latest firmware upgrade (3.12))
Music control
Calendar events on Timeline

There might be more, check the RockPool page on Openrepos.
