Specify source folder for Gallery App

The Gallery App scans the entire System for picture and video files. This is really bad when other apps creates pictures that should not shown in the gallery. I better to set source path that exclude every path by creating .nomedia file
Where can the source folders in which the gallery app searches for videos and pictures be defined ( if this is possible ) ?
More generally it would be very helpful it the gallery app would allow access to the folder structure. Currently it is cumbersome to scroll through all pictures - I could not yet determine any logic the sort order would follow - to find what you are looking for. Taking that even further sort or search options for other criteria - date, tags, location, etc. - could improve the usability of the app.
