Use darktable-cli to Process Raw File from Camera? HDR?

Hi,
I was always intrigued by Sailfish OS and would love to soon start playing with it (probably through a raspberry pi). But always wondered what limitations does the missing camera blobs for the smartphone cameras have? So might as well join the forum and ask here.
My idea of how a good photo can be made on linux, assuming we can get good raw images; Can we get good raw images without the blobs? Like, in focus and control the exposure? I don't know how low level camera stuff works so I'm just guessing you get the same RAW data with or without the blobs. Would be:
Take a raw photo, then use darktable-cli or a similar tool to process the RAW image to jpg. Should yield decent results. Also I don’t know if darktable allows HDR via command line, but if it does you could make an app that takes multiple images and creates an HDR jpg.
Is this possible or am I completely missing something, which I probably am.

Raw image processing by Android apps could be possible with Android 5 and up (see comments). But I don't know if raw image data is accessible for SFOS apps.
