Now that I uninstalled it using apptoid I wonder if there are any remains from google play services in my device or if I need to re-flash my phone to get rid of it.

Are android apps limited to only tracking usage of other android apps?

I assume they will have the IP's of the connections I use but they won't have access to my MIDI, text, call or browsing history.

On which device? On the XA2 and Xperia 10 devices you can just uninstall the android support and reinstall it which should get rid of every bits of Google Play Services.

Otherwise also check the Android Settings (install Alien Dalvik Control from openrepos to get access to it or watch my latest video about how to access it on newer devices (XA2 & Xperia 10). In Android settings you can check for apps installed and remove any Google ones that might be left over.

In general the android apps have limited access to stuff outside their android lxc container
