I guess it's on purpose, but the blinking LED of the charging Jolla draws all my attention, forcing me to hide it. But when hidden, I can't see it changing colors when an actual notification comes in...

Please, make an option to turn it off, this drives me crazy °_°

Look at https://together.jolla.com/question/11328/how-to-change-notification-led-pattern/ how to change it yourself (involves developer mode, since there's no official GUI yet).

The LED should be steady white when charging. When it's blinking white, charging is finished.

Sure, but I want to keep on charging anyway, so most of the time it's what I see

I think this answer is correct and the real more generic question is "allow me to customise the LED, including but not limited to turning it off completely" :-)

LED customization has been asked in a way four times (search for "notification led"). Closing this one.
