Hello, there'e a lot of software available for linux and that may be succesfully compiled and run for SailfishOS and a big part of it may be very useful.

I'd like to start building some usable GUIs for them (which basically would call the cli version), but i find the documentation available very restriced and sometimes a bit confusing.

How/where to get info e get started with that?

Have a look at the following ressources:

  1. https://sailfishos.org/develop/sdk-overview/develop-firstapp-article/ // Sailfish SDK support
  2. Sailfish devel mailing list / Sailfish developer mailing list
  3. http://qmlbook.github.io/ // Some basics on QML

in all cases you have to write your in GUI in Qt QML, which isn't that simple for a beginner like me for example. So go through all the example applications given with the Sailfish SDK and read/view things about QML programming.
