It would be nice to have the possibility to choose for every app (or at least Jolla's apps) which cover action will be displayed on the app cover.

This is feasible as it is already done by @coderus in the latest update of Mitakuuluu (v.0.2-7) -> Settings (via Pulley menu) -> Cover -> Left cover action and Right cover action (you can choose from six different actions).
