Welcome to the community @Luk I use Quasar MX music player https://meteorasoftworks.com/quasarmx/download for my music listening experience and changing tracks is possible with the call button on the earphones. A single click for pausing playback, 2 clicks for next track, and 3 clicks for previous track. The good part of this player is that Andre the developer is really cool and uses users feedback to add features to the player, so you could get your wish to control the media player with volume buttons as an extra feature. I don't know about media player apps, but Jolla's native media player supports skipping tracks via headset or headphone buttons. If you do sports, I suggest you buy a pair of sport headphones with buttons and use those to control the music. Also the Peble Smartwatch connector app supports controlling the music via the watch.
