When you click on any "mailto:" link, the default Sailfish email client opens up. But I don't like it (too few options for customizing). I would prefer using another client (I have installed and am using Aqua Mail, an Android app). How can I make the "mailto:" function call up Aqua Mail instead of the default client? In Windows10 you must first uninstall the default Microsoft email client, to force the OS to offer you the choice of the other email clients installed on your machine. I would do so if this were possible in Sailfish, but I don't believe it Is. Is there some other solution?

I don't think this is possible that easily currently.
Jolla harbour claimed a few years ago that they'll work on a global mimetype editor. But it never materialized
