I recently flashed my first Sony devices (Xperia XA2) to Sailfish. After installation, the devices ask on every reboot to lock the bootloader, but the flashing instructions do not suggest this.
As a dumb(ish) user I am a unsure should I believe the message given by the phone, and if so, why it is not mentioned in the instructions?

The open bootloader actually is required for Sailfish. So you can safely ignore this message.
As for the technical reasons behind this: The bootloader normally checks the integrity of the system it is about to boot. Since it only knows about the official Sony Android, it has to be unlocked in order to boot Sailfish. If you were to close it now with SFOS installed, it would complain about changed system files and deny booting.

The boot-lock must be left unlocked for booting SailfishOS or anything else (e.g. LineageOS) not signed by Sony.
