Is it possible to build Sailfish OS with just SMS/MMS capabilities as standard?

Just disable wifi and mobile data. This should effectively limit the phone to only calls and SMS/MMS. The applications will all be there, but won't have the ability to connect to the internet.

You can delete anything you want from any phone, if you have access to root files. Every aspect of the phone has one or more files that make it do what it does. If you delete those files, the app/function/feature goes away. You can also use pkcon or zypper to uninstall jist about anything, and probably safer, since it will show warning if you want to remove something that something else depends on. I think woth apps, it's usually safe to delete the app's specific folder from /usr/share/. You could copy it somewhere to test, and if it seems like a problem, or the phone won't boot or something, use recovery to put the folder back.

e.g. the web-browser does nothing automatically. Just move all the Apps you do not want to use in a folder and do not use it. That would be the safer way instead of deleting stuff (-:

Using a Jolla Phone, Sony Xperia X, XA2,... only for the camera, phone calls and SMS might not be the right device?! In the days of not having internet access on a mobile phone, you would not have a digital camera on board anyway.

Use a "new" Nokia 8110 or even just only a Blaupunkt FXS 01, a Panasonic KX-TU110, a Zanco Tiny T1 or something like that if you only want to have basic phone features. For saving money there, use a regular compact camera which will give you much, much, much better pictures.
