How can I switch to a default app I've installed. I'm focusing on the messaging app installed with sailfish. I don't care for the installed app and installed one from F-droid but it does nothing because Messaging get all the texts. This also applies to any other type of app like music, photos, etc. How can we do this?

Using the Mimer app you can set your default app for music, image viewer, videos, browser and text editor.
But I guess, that it's not possible to change the default jolla stock messaging app within to an android app. Nevertheless I don't know it for sure...

Check https://wiki.archlinux.org/index.php/XDG_MIME_Applications and https://superuser.com/questions/162092/how-can-i-register-a-custom-protocol-with-xdg.

In short, default programs can be set in ~/.config/mimeapps.list and in ~/.local/share/applications.

Probably Mimer app that @yajo mentioned modifies those files.

See also /usr/share/applications/mimeinfo.cache for system defaults.
