For some reasons, when I long press an Android App on apps list (in sailfish icons view) and click on "X" button (like when I uninstall a sailfish app), all app files aren't deleted.

With app Total Commander or in Play Store we can proper uninstall an Android App (all related app data are removed), why the same process doesn't apply when removing an app from apps screen ?

I think it is probably like this due to Android app updates reportedly being broken. So the only way how to currently update an Android app is to remove it and install updated version.

So if apps deleted their profile folders, users would loose all their local data for the given app when updating it using the current method.
