Whenever someone sends me a new phone number, I have to first link the new number to a contact, then go into the people app (search for the contact) and delete the old number. Therefore, I have to remember the number to be replaced, so I can delete it. Would it be better to give an option to directly replace a contact detail?

While I think this is a very good idea which has my support, I think you could actually have it much easier than how you described it.
If you link the phone number to an existing contact this contact is instantly shown in your call history, where you probably may have come from. So no need to search in the people app but just tap the entry and proceed editing your contact.
My suggestion as an intermediate step towards your proposed enhancement would be to have the optional opportunity to stay in the contact after linking to it so that you can proceed editing it. This should be quite easy to implement.
