Selection of Bluetooth Profile for Headset

I'm trying to connect this headset: Mad Catz F.R.E.Q.9 Wireless Surround Headset to my Jolla C via bluetooth to use it as a handsfree headset to take calls with it.
I'm looking for a way to actually chose which audio profile bluetooth uses. I've set it to headset and handsfree both but the microphone does just not work.
Does chosing the type actually make any difference regarding the protocol used?
The device supports SPP, HSP, A2DP, AVRCP, HFP
Are multiple protocolls in use when connecting the device or do I have to make sure it starts with the right one?
