Everytime when i change ambiance i get this zero voice mark, even i have sound 100%

This is just a visual error and will be addressed in a future release. The launcher does not currently support ambience-specific volume levels, so a zero is recorded in the ambience information but has no effect on the actual volume level.

I'm not sure I understand. One of the few things one can actually save in an ambience is the volume level. At least so it is in my case. When I change between my own ambiences, they do change volume level as well

You are probably talking about Sailfish OS? This question and my answer to it concerns Jolla Launcher running on Android.
