How to change the wallpaper? By swyping right or left, only two default images are available.

You have to go Gallery and select any image you want, then pull down the pulley menu and select "Create ambiance". If you make an ambiance "favourite"(by pressing the star symbol) it will appear for selection when you swipe left or right from lock or multitasking screen.
EDIT: Ooops - I just noticed you are asking about Jolla launcher with which I am not familiar. Sorry but the answer may not apply there.
I think that for alpha testing, only 2 demo wallpapers or Ambiences have been provided.

You should change your wallpaper from Gallery: http://jolla.com/guide/#sec-7
In general, there're a few thread asking for a simplified Ambience management.
EDIT: not working (probably) for Jolla Launcher, I suppose.
