When sending an email either from the active cover (+) or from the Gallery/Documents/whatever, the mail address chosen as sender is always the one that I don't want to use at all for outgoing mail. I always have to expand the fields, change the "From:" field and proceed.
Is there any way I can select one of my 3 mail accounts as the one that should be used as default?

This feature is there now! I suppose it came with the OS update yesterday.
Unfotunately it's a little bit hidden, though, so to reach it you need to:
Anyway, I'll close this request now. If one is not satisfied with the hidden Sender field, it needs a new request, I guess.
EDIT: Still choosing the default address is missing: the question has been reopened now.

I think also the possibility to change the default sender account is necessary to add. I don't know the N9 but I would say in Settings -> Apps -> Email is a good place for it.

As commented by Sailor on another answer (moving it here so it's more visible):
The only way I found to select an other account as default is deleting the one you want and readd it. The last added email account comes always the default one.

Good that there are Android alternatives like K9-Mail, otherwise I probably still would have to use my N9, since emails are quiet important in my daily life.
