So my life with Windows XP is about to end soon. I now need a device/os that would support not only Jolla but also Libreoffice. As I write a lot I need keyboards as well but a tablet could work out too. My laptop is Lenovo X61 and so far I have not been able to sync it with Jolla.

The X61 is pretty good so you actually do not need any new hardware but a new operating system. For libreoffice you may just try Ubuntu from a pendrive and see how you like it. If you are not brave enough to install it your own afterwards you may need to find someone who is. If you saved all your personal data to an external drive you may just tell ubuntu to install and use the whole harddrive for it. If you need to be on windows you need to buy windows 7. If you really want to get rid of the hardware, I'd love to have it (tell your price)!
For syncing, there is only Google and uSoft Exchange for now and both not very reliable. If you want to backup, a uSD card is best and do an internal backup and then save it to the uSD card. Lets see what the next update in a few days has on that matter.
And if you don’t like Ubuntu’s look and feel, you could try other flavours of it (Kubuntu, Xubuntu, Lubuntu) or Linux Mint. These should be good choices for a newbie. And there are hundreds of other choices. It depends on what do you like and how do you want to use your PC.
Another worthy mention is Elementary OS if you prefer very simplistic and minimalistic OS.

As far as Sync goes, the bestr way would be trough some cloud service (iirc next update should bring 2way sync with google services). It'd be awesome if we'd get ownloud support.
With regards to OS, depends on what software you need to run, but if you feel brave, you can try some solid Linux distributions (*buntu, Fedora, OpenSuse). Looking at hardware spec of you tablet most of the things should work out of the box. To try you even don't have to install it on your hard drive, just boot from live-usb (i believe those distros have tools for WIndows to prepare it). With benefit not costing you a dime.

Purchase Windows 7 as that will work with your Lenovo X61 and will support liber office. It will also run fine on your X61

You can pick up home premium from around £70 on amazon.
I use Windows 8.1 to connect to and transfer music to my Jolla no problems.

Started testing an old laptop with OpenSuse today, I used it for a short time few years ago and I seem to have forgotten most of it. Did not test yet if it recognizes Jolla (xp does not). Would be tempted to get rid of Windows completely - dont know what I would miss. I guess the only MS products I use are Skype, notepad & file manager.
So Jolla is not recommending/favoring any desktop OS over others? Will Sailfish eventually run on desktops too? ;) I feel little puzzled now: which pieces fit together when I am picking them from different boxes?
No SailfishOS is not made of that kind yet. When there is a Desktop-Suite available we will see what they support or not. Newer OSs have MTP (that is what is needed for plugging it into your USB port and actually be able to see files) available, for linux you are looking for libmtp to be installed and your filemanager support it (quick search should answer that), skype is available for linux too. This ends here for me as I have no knowledge about OpenSuse at all.

I heard there is no support for Libreoffice on Android yet. Do you use Linux tablets and do they support Jolla?

Jolla is based on Linux. If you do not need Windows only programs: Why not start using Linux on the desktop? LibreOfffice should run on most (if not all) Linux distributions,
(When Sailfish can sync with the desktop, I expect that a solution for Linux desktops will be there soon.)
