Hi,
first of all I'd like to thank all the people at Jolla for the awesome support and updates you're giving :-) So, according to the release notes of 1.0.7.16, Folders are now supported.
I feel kind of dumb asking this question, but....how does it work? I expected something similar like in the N9, but I have tried and tried and tried and I still cannot create a Folder.
Any guide?

In the app launcher, tap and hold like you would to remove an app or switch apps around. Tap and hold an app you want to have in a folder and drag it onto another app that you want to have in that folder, and the folder will be created. Then you drag more apps to the folder if you want.
If you want to change the name of the folder, tap on the screen to get out of the 'app removing/dragging to folders' view, then tap on the folder you want, and its name should show in the top right. Tap on the name and you can edit it. You can also change the icon the folder uses in this view by tapping on the folder icon in the top left.

Similar to iOS. You create a folder by dragging an app on top of another in the edit/arrange view. When viewing the contents of the folder, you can change the icon and name of the folder by tapping on them in the top of the screen.

Long press an icon until it gets the x sign then press again and move it over to the app icon that should be with the first one in the same folder. The folder is automatically created.
Tap on the folder icon on the left upper side to select the folder style.
Long press on the folder name to change the name of the folder.

Necessary to folders instead of icons can be used application icons. it will be more visually informative than standard icons and signature folders.
I agree folder icons at the moment are not informative, what I would like to see instead of the standard Jolla icon frames:
