Who is going to be responsible for warranty and post warranty repairs of Xperia phones with SailfishOS in Europe???
Sony Mobile or Jolla?

I really hope installing SailfishOS will not void phone's warranty!

Why would Jolla be responsible for warranty claims on Sony's hardware? In what universe would the company providing the warranty be anyone but Sony? Is Google providing warranty for Sony's Android phones? No, I didn't think so.

It depends on who is selling you the device, at least in Germany (and EU afaik) the seller is the first contact for warranty but can forward you to the manufacturer.

You should ask your question here: https://together.jolla.com/question/157639/jolla-sony-xperia-qa/ if it has not been requested yet,
