I guess the idea is as follows: if you merge a Google Talk contact with a phone number contact, then removing either of those info would actually be equivalent to remove the entry in one of the accounts.
Say you remove the Google Talk ID from someone, it would mean to remove the guy from your Google account, but not from your phone directory.
Basically, I think that the workaround would be to unlink the contact, and then delete it.
But if I may give my point of view on that, I think that this way of handling multi-accounts is quite clumsy. Simply separating contact info in a per-account manner would seriously help.
